WASSUP… wassup… wassuuuuuuup!!?? (In my Martin voice.) Listen yall… this corn recipe right here is FIYA! It’s so good you might forget it’s just a frozen bag of corn you picked up at the local grocery store. Lol!

I didn’t have to work that hard to perfect this recipe because I remember how my mom and Nana made it for dinner years ago when I was just a kid.

Childhood memories of frozen vegetables

My family always stacked up on frozen vegetables whenever they went grocery shopping. Frozen vegetables are not only cheap and easy to make but no preparation is needed.

You don’t have to labor over the stove for hours to make them either, that’s why they make for such a good alternative to fresh vegetables because they only take a few minutes to cook.

Frozen vegetables are also a healthier option than their canned counterparts. But the convenience is why so many people love frozen veggies. Most people work 9 to 5 and don’t have the energy or time to spend 2 hours preparing and cooking fresh vegetables for dinner.

With frozen vegetables, all you have to do is add them to a pot or pan of broth or water, season them to your liking, and within 10-15 minutes, BAM, they’re all done and ready to be served. My mom always took me and my sister shopping with her when we were young!

One thing my momma didn’t do was put her kids on other people so if she didn’t get a chance to go shopping while we were in school, she’d take us to the store with her.

And one thing I did not like, was walking through those cold behind freezer aisles because she didn’t just go through them for frozen vegetables but for Milk, Cheese, ice cream, and tv dinners. Lol!

I was a little skinny anemic kid so that’s one childhood memory of frozen vegetables that I don’t wanna remember! Lol! One thing I remember about eating corn as a kid is, whenever my mom served it as a side for dinner, she’d almost always serve white rice as a starch side as well.

I’m going to ask her why that is… Maybe because certain food taste good together and corn and rice is one of those matches made in heaven?

I remember mixing my corn and rice as a kid whenever my mom made both for dinner – I just loved something about rice mixed with corn.

And I must say, corn was one vegetable my parents never had to force feed me. Lol! And that’s obviously because it was sweet because they put sugar in it and children loooove sweets.

Now most people prefer fresh corn on the cob over frozen corn but I love both. It doesn’t matter to me as long as it’s sweet and buttery, I’m good to go.

That’s the way my mom and Nana always made it and I still make it that way to this day. I think using sugar and butter is the key to good corn.

My nana would always add a pinch of salt to enhance the overall flavor and a lil cayenne pepper to give it a kick of heat. This combination of ingredients work perfectly together.

Key ingredients and alternatives

  • Butter : Everything tastes better with butter… but it gives the corn flavor and creates a silky glaze as it combines with the sugar. This is definitely the perfect combo for corn on the cob!
  • Sugar: Sugar is solely for sweetness! Who doesn’t like sweet corn? Nobody! How much you add is completely up to you though!

    Honey is a good alternative if you don’t have sugar and I actually use both when I make corn on the cob!

  • Salt: Salt just enhances the flavor of the corn and bring out the overall flavor of the dish.
  • Pepper: Pepper is for flavor and gives the corn that umph! It doesn’t taste as good without pepper so I always make sure I use a little of it. White pepper is an option if you don’t have black pepper- either one will work!
  • Garlic powder: A hint of garlic adds a pungent savory flavor that goes well with corn. Garlic paste makes a good alternative if you don’t have any garlic powder on hand!
  • Cayenne pepper: This just adds another layer of deliciousness to the corn. Yall know I always talk about balance and layering food with different flavors to enhance it…

    I think when you’re making a dish like this that’s on the sweet side, it’s good to balance it out with some heat so that it’s not just SWEET.

    So I like to add just a pinch of Cayenne pepper because it’s very strong and I don’t want the corn to be too spicy. You just want to a little spice… it cranks the recipe up a notch!

How to make sweet buttery corn

1. Add water to a pot or skillet and place it over heat until it comes to a boil then add in the corn.

2. Add in the corn, butter, sugar, and seasonings, then stir well.

3. Let the corn simmer until it’s nice and tender, about 8-10 minutes.

What to serve with sweet buttery corn

  • Fried pork chops: Seasoned crispy fried pork chops smothered in hot sauce and sweet buttery corn are a match made in heaven, try it… OMG!
  • Steak: The savory beefy flavor of steak tastes great with sweet buttery corn… I don’t care if it’s baked, seared on a skillet or smothered in gravy. You can’t go wrong with corn as a side dish with steak as the main dish.
  • White rice: Rice and corn go together like peanut butter and jelly, enough said! Lol!

I played around with this recipe for weeks before finding the perfect combination of ingredients and seasonings to make this recipe A1. So give it a shot, I promise you’ll love it as much as I do!

Description

Sweet, buttery, corn with a kick of heat. The perfect vegetable side dish for any dinner.

Ingredients

1 Lb Frozen Corn
1/2 Cup Water
2 Tbs Butter
2 Tbs Sugar
1/2 Tsp Salt
1/4 Tsp Garlic Powder
1/4 Tsp Black Pepper
1/8 Tsp or a pinch of Cayenne Pepper

Instructions

1. Place a skillet over high heat and add in the water.
2. After 2 minutes, or once the water comes to a boil, reduce the heat to medium-high heat.
3. Add the corn, butter, seasonings, and sugar, then stir well.
4. Let the corn cook for 8 to 10 minutes and stir periodically.

Notes

  • This corn is semi-sweet it’s not actually that sweet. So if you like your corn pretty sweet, add an extra 2 tsps of sugar.
